First time baking a sweet loaf!! This Black Forest & Whittakers Dark Chocolate Sourdough was so much fun to make, but honestly it smelt and looked better than it tasted (for me personally) ๐Ÿ˜‚ my fiancรฉ loves it! I donโ€™t know why I expected it to taste sweeter and like cake, it does not ๐Ÿ˜… itโ€™s obviously sour and has a slight bitter chocolate taste from the cocoa. My fave bites were the ones with chocolate pieces so next time I would opt for only milk chocolate maybe and not dark?! ๐Ÿฅฐ itโ€™s such a nice soft/fluffy sourdough!

Recipe by @crustycravingsbyh on TikTok –
Bread Flour: 500g, Cocoa Powder: 50g, French Press Coffee: 100g, Water (warm): 350g, Active Starter: 100g, Brown Sugar: 30g, Salt: 10g, Vanilla Extract: 5g, Chocolate: 130g

(I used normal cocoa powder not Dutch and I didnโ€™t have espresso so I used French press coffee).

Initial mix with everything, let it sit for 1hr and then take aliquot sample and do 4-5 stretch and folds 30mins apart. Once aliquot is done, pre shape the dough, bench rest 30min, shape and refrigerate overnight.

Bake at 230c lid on 40mins, 220c lid off on lower rack 10mins. ๐Ÿ’–

I have never heard of this before, but everything about just feels right. Not sure how to put, but I feel this should be a way more popular thing to bake.

This is freaking inspiring, very nice work!

You inspired me to try the aliquot method. Now I just ordered a tiny Dutch oven because I don’t have anything to cook my little loaf in.

Whittakers is not only the best chocolate of all time, it might just be the best food of all time. This bread looks fantastic. Technique and vision coming together. Bravo
